Frenchman Leon Edmond Mazure (1860-1939) of Burgundy was the pioneer of sparkling wine production in South Australia.
As a young man Edmond Mazure worked for a time at the famous vineyard of Clos Vougeot, before travelling to Spain to gain more wine making experience. Migrating to South Australia, in 1886 he was in charge of the cellars at the Jubilee Exhibition. Mazure was then employed by Josiah Symon as manager of the Auldana vineyard. Here he pioneered the manufacture of Australian sparkling wine, including sparkling burgundy and champagne, on a commercial basis. He retired to Victor Harbour after a distinguished career as a wine maker and judge.
